The cellar

The cellars are situated in le Bouchot, on the historical site of the domaine. Gradually expanded by successive generations, the last renovation was in 2002. It opted for organization by gravity (grape reception, racking…) and complete re-tiling of the cellar (in the interest of hygiene).

Our tanks in stainless steel and epoxy covered concrete are thermo regulated. We take special care in each step of the elaboration of our wines :
- Maturity control of the vines (sugar level, acidity, tasting...) to choose the best possible date for harvest.
- Harvest at the most propitious times, with fast transportation to the cellar
- Pressing with pneumatic wine presses which press wine very gently and produce a juice whose qualities are preserved.
- Settling of the juice which becomes clear naturally by sedimentation under low temperatures.
- Alcoholic fermentation with temperature control and daily observations and tastings.
- Resting on fermentation lees for three or four months.
- Racking.
- Filtration and bottling carried out by us ("à la propriété").
- Labelling and dispatching. Our Pouilly Fumé is marketed one third in France and two thirds in the rest of the world (Great Britain, Ireland, Belgium, USA, Netherlands, Iceland...).

The caveau

We will welcome you in our caveau, in a XVIIIt th century vaulted cellar in the center of Pouilly sur Loire. This was renovated in 1998.
